The AirPods use the T2002 processor (H1). There are multiple internal names depending on where you look: AirPods1,3 and Audio2,1.
Compatibility
Advanced features of AirPods (3rd generation) require iOS 15.1, tvOS 15.1, watchOS 8.1, or macOS Monterey 12 and later.
